Bruschetta - Delizioso!
Craving a fresh snack? Or, are guests coming over and you have nothing to serve them? Have no fear - follow this easy bruschetta recipe to get your lazy Friday night or house party in full swing. We chowed down on this at an In the Midfield family member's house, and we can't get enough.

Total Time: 25 minutes
Servings: 6-8 (appetizer)
1 Baguette - cut it length-wise and toast OR Grab a bag of your favorite plain chips
1 Yellow Pepper - diced
3 Scallions - diced (use as many or little as you desire)
2 teaspoons minced garlic
3 tablespoons extra-virgin olive oil
1/4 cup grated parmesan cheese
2 1/2 cups minced roma tomatoes
1/3 cup thinly sliced fresh basil leaf
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh ground pepper
1. In a medium bowl, add the pepper, scallions, garlic, olive oil, cheese, tomatoes, basil leaf, balsamic vinegar and salt.
2. Mix and marinate, at room temperature, for 15 minutes.
3. If you are using a baguette, slice it into individual pieces and spoon the mixture on top. If you are using chips, scoop away!
