Tandoori Chicken Quesadilla

Tandoori Chicken Quesadilla

We love Indian and Mexican food. So, it made sense to meld the two cuisines together for a flavorful brunch dish. We will definitely be experimenting with other ways to marry Indian and Mexican dishes in scrumptious harmony...

10-15 minutes (serves 2)

-2 Large Flour Tortillas
-5 Eggs (we prefer cage-free)
-2-3 pieces of Tandoori Chicken (left-over from your take-out or your homemade chicken dinner with tandoori spice rub)
-Shredded Mexican Cheese (e.g. Kraft)
-Spices (flavor to our preference): Cayenne, Garlic Powder, Chili Powder, Salt and Pepper
-Sauces/Salsas: Your Preference; we love Valentina Salsa Pictante (Salma Hayek loves this also!), El Yucateco Jalapeno Hot Sauce
-A grill pan like this works best, but you can use a regular pan and spatula to make the quesadilla also
-Spatula

1. Scramble eggs and add spices (to your taste preference); remove eggs from the heat
2. Place each tortilla on a plate
3. Chop of tandoori chicken into small pieces
4. Place tandoori chicken pieces and sprinkle cheese on one half of each tortilla
5. Scoop scrambled eggs onto the same half of each tortilla
6. Transfer one tortilla to your pan, fold it over and hold down the grill pan top for 30-40 seconds; flip the tortilla to the other side and hold down the grill pan top again for 30-40 seconds
7. Repeat step 6 for the second tortilla
8. Serve your tortilla with your preferred salsa and enjoy
