Easy Meals for Busy People: Tuesday Tacos
We have a confession...we love tacos. There are a million ways to make them. Here is our latest recipe. If you are a vegetarian, substitute the ground chicken for tofu. Bon appétit!
1 to 1.5lbs ground chicken or chopped chicken breast
1 large green bell pepper (chopped into half slices)
1 large orange bell pepper (chopped into half slices)
1 medium shallot (diced)
Garlic (mince 1-2 cloves)
Your favorite taco seasoning (we loved Williams Sonoma Taco Seasoning and now adore Simply Organic Southwest Taco Seasoning)
1 bag of spinach
Packet Flour Tortillas (we like Trader Joe's Flour Tortillas)
Prep: 5-10 minutes
Cooking time: 10-15 minutes
Total: 25 minutes
Serves 2 people with leftovers for 1 workday lunch
In a medium to large skillet over medium heat, brown chicken; simmer until chicken is no longer pink, and juices run clear.
Add the following to the skillet with the chicken: chopped bell peppers, diced shallot, minced garlic, taco seasoning (we usually use halve the pre-measured packets to season to our personal taste) and 3/4 cup of water. Stir and simmer for 5 minutes.
Warm up the flour tortillas in the toaster oven or microwave until soft.
Add the chicken mix to your flour tortillas, sprinkle in cilantro, squeeze lime over your taco, add some spinach and a dash of Sriracha. Delicious.
